and healthy fact a weight watchers recipe (8 points if you are interested!).

Serves two
2 Tortilla Wraps
1 Courgette (thinly sliced)
2 small red onions (thinly sliced)
Vine tomatoes (quartered)
25g grated low fat cheddar cheese (I used a little more)
2 slices of ham (shredded into smallish pieces)
1 Red Pepper (sliced)

Grill the vegetables under a medium to high heat until done to taste (I like mine slightly charred). Remove from heat and place the tortilla on the grill pan, top with the veggies, the ham and sprinkle the grated cheese on top. Slap it back under the grill and wait until the cheese has melted and the edges of the tortilla slightly charred (or however you like it).

Great served with a big was even nicer than I expected and really filling.

My husband had a second but spread a little passata on the base and topped with shredded ham, sliced tomatoes and cheese. The options are endless!
